Lamb Shoulder Chops

6 lamb shoulder chops
Aurora Kosher Salt to taste
freshly ground black pepper to taste
2 tablespoons Aurora extra virgin olive oil
2 tablespoons Ponti balsamic vinegar
1 lemon, zest and juice separated
6 red pearl onions
6 cloves garlic
1 jar Sacla artichoke heats
1/2 jar Aurora caper berries
1 spring rosemary
6 thyme springs

In a large dish, season the lamb shoulder chops generously with salt and pepper.
Add all ingredients except the lemon juice to the lamb, mix well, cover, and marinate for 1 to 12 hours.
When ready to cook, bring lamb to room temperature. Preheat oven to 425 degrees.
Place chops on a lined baking sheet, coat with marinade, and bake for 25–30 minutes, turning halfway, until desired doneness.
Drizzle with lemon juice and olive oil, rest for 5 minutes, and serve.
