Lamb Shoulder Chops

    • 6 lamb shoulder chops

    • Aurora Kosher Salt to taste

    • freshly ground black pepper to taste

    • 2 tablespoons Aurora extra virgin olive oil

    • 2 tablespoons Ponti balsamic vinegar

    • 1 lemon, zest and juice separated

    • 6 red pearl onions

    • 6 cloves garlic

    • 1 jar Sacla artichoke heats

    • 1/2 jar Aurora caper berries

    • 1 spring rosemary

    • 6 thyme springs

  • In a large dish, season the lamb shoulder chops generously with salt and pepper.

    Add all ingredients except the lemon juice to the lamb, mix well, cover, and marinate for 1 to 12 hours.

    When ready to cook, bring lamb to room temperature. Preheat oven to 425 degrees.

    Place chops on a lined baking sheet, coat with marinade, and bake for 25–30 minutes, turning halfway, until desired doneness.

    Drizzle with lemon juice and olive oil, rest for 5 minutes, and serve.
