Pino’s Mixed Bean, Tuna and Arugula Salad

1 398ml can Aurora Mixed Beans, drained and rinsed
2 85g cans Allessia solid light tuna in oil, most of oil drained
4 cups arugula
1/4 cup Tutto Calabris red onions of Tropea, thinly sliced for the dressing
1 Allessia anchovy fillet
1 teaspoon Aurora capers, drained
2 teaspoons lemon juice
2 teaspoons Dijon mustard
2 tablespoons mayonnaise
1 small clove garlic
1/4 cup Aurora Extra Virgin Olive Oil
freshly ground black pepper, to taste

Start to Finish Time: 10 minutes
To make the dressing, add all the ingredients into a mason jar and blitz until smooth with an immersion blender.
Equally divide the arugula into 4 serving bowls. Top with the beans and tuna.
Drizzle with the dressing and garnish with the Tropea onion slices.

Serving Ideas: Make the dressing ahead of time. You can keep it in your fridge for 2-3 days.
