Pino’s Traditional Panettone Bread Pudding

    • 1 Aurora Tradizonale Panettone with raisins and candied fruit

    • 4 eggs

    • 1 cup heavy cream

    • 1/2 cup whole milk

    • 1/4 cup brown sugar

    • 1 teaspoon vanilla extract

    • 1/2 teaspoon cinnamon

    • 1/4 teaspoon ground clove

    • 1 pinch salt

    • 1 tablespoon unsalted butter

    • whipped cream, optional

  • Start to Finish Time: 1 hour 15 minutes

    Preheat oven to 350 degrees

    Cut panettone into 1 inch cubes and place onto a lined baking sheet.

    Place into the oven for 15 minutes. Set aside to cool.

    Meanwhile, grease a 9 x 13 inch casserole dish with the butter.

    In a large bowl whisk together the eggs, cream, milk, half of the brown sugar, vanilla, cinnamon, clove and salt.

    Place the now cooled Panettone into the bowl with the egg mixture.

    Gently toss to coat each piece then transfer into greased casserole

    dish with any unabsorbed liquid. Let rest for 10 minutes.

    Sprinkle the remaining brown sugar over top and bake in center of oven for 45 minutes, until the bread pudding has set in the center and is golden brown.

    Serve warm and topped with fresh whipped cream.
